Hello Kimberly,
This goes back almost 3 decades, but the Provincial Archives in Victoria had a very active and successful Oral History programme, including publications.
Suggest you contact them direct. Indeed, would be ideal if you could make a day trip there to examine their files for information that would help you regarding organizing, interviewing techniques, and outcomes. Likely there are still some Archives old timers in that city that would be pleased to give you further guidance.

Hello, I am doing an oral history research project at the Museum in Hope, British Columbia this summer. I am quite inexperienced in actually 'doing' oral history, but I do have an undergraduate degree in History, with a focus on 20th century Canadian history. If you could provide any basic information, that would be wonderful! I am also open to suggestions as to what you find to be the best recording device/dictation equipment/transcription process to capture the stories! Thank you, Kimberly at Hope Museum
